Day 1: old city temples
Walk the old town inside the moat, taking in Wat Chedi Luang and Wat Phra Singh, then browse the Sunday Walking Street market if your dates line up.
Day 2: elephants and mountains
Spend the morning at an ethical, no-riding elephant sanctuary in the hills, then head up to Doi Suthep temple for the city view at sunset.
Day 3: cooking, cafes or Doi Inthanon
Take a Thai cooking class, cafe-hop the Nimman district, or take a full day trip to Doi Inthanon, Thailand's highest peak, with its waterfalls and twin pagodas.
